The Philosophy

Our signature dishes begin with what is good right now: produce from growers who know their craft, fish from the coast, and cuts that reward patience. We cook them without fuss, letting the Darlinghurst neighbourhood's energy guide the menu. The result is food that feels both familiar and quietly surprising — the kind of plate you want to linger over while the evening gathers around you.

The Parlour Cut

A thick, dry-aged cut is seared hard until the outside crackles, then rested so the centre stays blush and tender. The knife slides through like it has been waiting for you. A glossy jus, reduced from roasted bones and a splash of red wine, pools around the plate, while a spoonful of creamy mash catches every drop. It is the dish that anchors the evening — rich, confident, and made to be shared slowly.

Darlinghurst Gnocchi

Soft potato gnocchi, made fresh each evening, are folded through a sage butter sauce that clings to every ridge. Shaved parmesan melts into the warmth, and cracked black pepper cuts through the richness. It is comfort food with a sense of place — named for the streets outside our door, where the evening starts to hum just as the first bowls leave the pass.

The Royal Flush Dessert

A dark chocolate fondant gives way to a molten centre, warm and bittersweet. Beside it sits a quenelle of vanilla bean ice cream, slowly melting into the chocolate, while fresh berries add a bright, sharp edge. A subtle playing-card motif is etched into the rim of the plate — a quiet nod to the poker lounge, not a wager. It is the final hand of the meal, played sweet.

Chef's Note

I love watching the room settle as the first plates go out. These dishes are the ones I cook when I want someone to remember why they came. The gnocchi is my favourite — it tastes like Darlinghurst after the rain, warm and a little bit golden.

That gnocchi started as a late-night experiment after a busy service. I had a pot of potatoes going soft and a handful of sage from the window box. The first bowl was meant for the team, but a guest at the bar asked what smelled so good. Now it has a permanent place on the menu, and every time I plate it, I think of that first quiet moment before the dining room filled up.

All three signature dishes are available on the main menu when you dine in. Because we cook them in small batches and let the seasons guide the details, some elements may change from week to week.
